Louis Francois Pectine NH Nappage is a powdered gelling agent for glazes and fillings. This pectin is ideal for professional patisserie. It helps to achieve the perfect texture for toppings, tart fillings and coatings.

This gelling agent is perfect for coating fruit pulp. Being thermo-reversible, it can be re-worked several times without losing its qualities.

This 1kg size is ideal for professional kitchens and pastry chefs.

Recommended dosage: Generally 0.8 to 2% according to pulp content (10 g/kg of coating).
Directions for use: Pre-mix with 5 to 8 times its weight of sugar or other powdered ingredients. Disperse in water under agitation to avoid lumps. Complete dissolution is obtained after 15 minutes.

Ingredients: Pectin E440, diphosphate E450, dextrose, calcium phosphate E341.
